These Matcha Lavender Cloud Cups are one of those desserts that feel way more complicated than they actually are.

They’re smooth, lightly floral, and have that soft, airy texture that feels like the silkiest pudding you’ve ever had. The kind of dessert you’d expect at the end of a high-end prix fixe tasting menu… not something made in your kitchen with a microwave.

Matcha has always been one of Sidney’s favorite things, but Thomas has never really been into it at all. After trying this though, he finally gets it (This is a HUGE deal!). The balance of the creamy matcha and the soft lavender completely changed his mind.

And somehow, they’re also surprisingly high protein thanks to the Greek yogurt we use, which has about 19g of protein per cup.


Recipe

Ingredients

Matcha Filling:

  • 1 1/2 tsp matcha powder
  • 1 cup white chocolate chips
  • 1 cup cream
  • Splash of vanilla
  • 1 cup high protein Greek yogurt (approx. 19g protein)

Lavender Layer:

  • 1 tbsp dried lavender
  • 1/2 cup cream
  • 1/2 cup white chocolate chips
  • Splash of vanilla
  • 1–2 tsp honey

Whipped Topping:

  • 1 cup cream (33%)
  • 3/4 cup icing sugar
  • 1/8 tsp cream of tartar
  • Matcha for dusting

Directions

Before You Start (time-saving tip)

Start the lavender milk first so it has time to steep while you prepare everything else. This builds more flavor and keeps the process smooth.


Lavender Layer

  1. In a small pot, combine:
    • 1 tbsp lavender
    • 1/2 cup cream
    • splash of vanilla
    • 1–2 tsp honey
  2. Place over medium-low heat and let it gently simmer for 5 to 10 minutes. It should lightly bubble, not boil aggressively.
  3. Remove from heat and let it sit while you prepare the matcha layer. This helps deepen the lavender flavor.
  4. Place 1/2 cup white chocolate chips into a heatproof bowl.
  5. Reheat the lavender cream slightly if it has cooled, then strain it through a sieve over the chocolate. Press the lavender with a spatula to extract all the liquid.
  6. Stir until completely smooth and glossy. Set aside.

Matcha Layer

  1. Boil water.
  2. In a small bowl, whisk together the matcha with a small amount of hot water using double the usual amount of powder to create a strong matcha concentrate. Make sure there are no clumps.
  3. In a microwave-safe bowl, combine:
    • 1 cup white chocolate chips
    • 1 cup cream
  4. Microwave for 1 minute, then stir. If needed, continue in 15-second increments, stirring between each, until fully melted and smooth.
  5. Add the matcha concentrate to the melted mixture and stir until fully combined.
  6. Add 1 cup high protein Greek yogurt and mix until completely smooth and creamy. Add vanilla.
  7. Pour evenly into serving cups or bowls.

Assemble

  1. Pour the lavender ganache over the matcha layer.
  2. Use a spoon or toothpick to gently swirl the layers together for a marbled effect.
  3. Place in the fridge for 1 to 4 hours, until set.

The final texture should be soft, silky, and almost cloud-like.


Whipped Topping & Decorate

  1. In a mixing bowl, combine:
    • 1 cup cream
    • 3/4 cup icing sugar
    • 1/8 tsp cream of tartar
  2. Use a hand mixer to whip until soft peaks form.
  3. Spoon or pipe onto the chilled cups. A zip-top bag works perfectly for simple rosettes.
  4. Lightly dust the tops with matcha powder.

Serve & Store

Serve chilled.

Store in the fridge and enjoy within 1 to 3 days.
