There is a reason a simple focaccia bread recipe is the ultimate gateway to bread baking. As standard baking guides point out, the secret to its iconic crispy crust and airy, soft interior is a simple, high-hydration dough that doesn’t require any kneading… But if you’ve ever tried making a standard room-temperature dough in the dead of summer, you know that a warm kitchen can make your dough over-proof into a flat, sour puddle before you even turn the oven on. This can deter beginner bakers as I know it scared me away for far too long! I promise this recipe is beginner friendly and works every time– and I’ve made it a lot.

My Summer Baking Trick: The Tupperware Schedule

First-Person Experience: During the hot summer months, I shift the entire timeline to beat the heat. I mix the dough the night before and let it do its first rise safely in the fridge. First thing in the morning, I take it out as soon as I wake up so it can get its 4-hour counter rise before the house gets too warm. I bake it early in the morning, turning the oven off before the midday sun hits.

Once you get into the hang of this workflow, you’ll find yourself making it almost every day. Because it relies on basic pantry staples, it is incredibly cheap to make: costing only pennies per loaf compared to artisan bakery prices!

Tips for Focaccia Success

  • What is deflating? When yeast ferments, it creates large carbon dioxide pockets. Deflating (gently pressing the dough down) releases these erratic gas pockets and redistributes the yeast. For our everything bagel version, this ensures a gorgeous, even, pillowy crumb rather than giant, hollow air caverns.
  • Why use a Tupperware container? Flimsy plastic wrap lets gas escape and can dry out the surface of your dough. A snapped-on Tupperware lid creates a closed microclimate that fully hydrates the starches, yielding beautiful, crispy micro-blisters on the final crust.
  • How to keep the seasoning from burning: At 450°F, dried garlic and onion can easily scorch. Pressing the seasoning gently into the dough dimples shields the larger pieces from direct heat, keeping them perfectly toasted rather than burnt. Brushing over the seasoning with oil can also prevent burning for longer.

Why Are We Baking at 450°F? (Don’t Panic!)

If you are used to baking standard sandwich loaves, a 450°F oven might feel dangerously hot. But for a simple focaccia bread recipe, high heat is your best friend. Here is the science behind why it works:

  • The Steam Explosion: Focaccia is a high-hydration (wet) dough. When it hits that intense 450°F heat, the water inside rapidly turns to steam, causing a massive “oven spring” that creates those signature fluffy, airy pockets.
  • The “Fried” Bottom Crust: Because the metal pan is heavily oiled, the high heat essentially shallow-fries the bottom of the dough in the olive oil. This is the secret to that iconic, shatteringly crisp bottom crust. This happens even when you don’t use a metal pan, I tested this with silicone, and while not as crispy, it works just as well!
  • Moisture Retention: Focaccia is a flatbread, meaning it cooks through quickly. Baking it hot and fast ensures the outside gets a deep golden color before the inside has a chance to dry out.

Ingredients

  • 1 tsp. instant or active dry yeast
  • 1 tsp. granulated sugar
  • 1 ¼ cups warm water
  • 2 ½ cups all-purpose flour (or bread flour for a chewier bite)
  • ½ tbsp. kosher salt
  • 2 tbsp. extra-virgin olive oil (plus more for greasing and drizzling)
  • 1 ½ tbsp. Everything Bagel Seasoning
  • Optional Bagel Gloss: 1 tsp honey dissolved in 1 tbsp hot water

Step-by-Step Instructions

1. Bloom the Yeast and Mix

In a large bowl, combine the yeast, sugar, and warm water. Let it sit for 5 to 10 minutes until the mixture gets foamy. Add the flour and kosher salt. Stir vigorously with a wooden spoon or spatula until the flour is fully hydrated and a sticky, shaggy dough forms.

2. The Overnight Tupperware Microclimate

Pour 2 tablespoons of olive oil over the dough and turn it to coat completely. Transfer the dough to a Tupperware container (similar in size to an 8×8-inch baking pan) and seal the lid tightly. Place it in the fridge for 8 to 24 hours.

3. The Early Morning Counter Rise

As soon as you wake up in the morning, remove the Tupperware from the fridge. Place it straight onto your kitchen counter, completely unopened, for 4 hours. This lets the chilled dough gently wake up and complete its fermentation before the house warms up for the day.

4. Deflate & Transfer

Line and generously grease an 8×8-inch metal baking pan with olive oil. Gently deflate the dough by pressing down on it with oiled hands to pop the massive, erratic gas pockets.

Transfer the dough to the prepared pan and let it rise for about 45 minutes until it naturally fills out the corners. Meanwhile, preheat your oven to 450°F with the rack in the middle position.

5. Dimple and “Lock” the Seasoning

Just before baking, drizzle the top of the dough with a little more olive oil. With oiled hands, plunge your fingers straight down into the dough all the way to the bottom of the pan to create deep dimples.

Sprinkle your Everything Bagel Seasoning generously over the top. Use the flats of your fingers to very gently press the seeds into the dough matrix to anchor them.

6. Bake and the “Bagel Chew” Gloss

Pop the pan into the oven at 450°F. Bake for a total of about 35 minutes until the crust is a deep, majestic golden brown.

  • The 10-Minute Foil Trick: Keep a close eye on the oven during the last stretch of the bake. If your Everything Bagel seasoning looks perfectly toasted but the bread needs a little more time, loosely tent a piece of aluminum foil over the top of the pan for the final 10 minutes to shield the dried garlic and onion from scorching.

The exact second the focaccia comes sizzling out of the oven, brush the top lightly with your honey-water mixture. This mimics the traditional bagel-boiling process, instantly locking in moisture and giving the top crust an authentic, shiny, bagel-like chew.

Let it cool in the pan for 15 minutes, then move it to a wire rack to keep the bottom perfectly crisp. Serve warm or slice up for lunch!
