  • ¼ cup (30 g) pumpkin powder
  • 1 cup (240 ml) warm water (to rehydrate powder)
  • 1 tsp baking soda
  • ½ tsp gluten-free baking powder
  • ¼ tsp salt
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • ⅓ cup vegetable oil
  • 1 ½ cups gluten-free all-purpose flour
  • ¼ tsp xanthan gum (omit if flour blend has it)
  • 1 tsp cinnamon
  • 1 tbsp pumpkin pie spice

Directions

  1. Preheat oven to 350°F (177°C). Grease a 9×5 loaf pan.
  2. Whisk pumpkin powder with warm water until smooth. Let sit 5 minutes before moving on to the next step.
  3. Stir in baking soda, baking powder, and salt.
  4. Add sugars and vanilla; mix until combined.
  5. Beat in eggs and oil until smooth.
  6. Fold in flour, xanthan gum, cinnamon, and pumpkin pie spice. Batter will be thick.
  7. Spread into prepared pan and bake 55–65 minutes, or until a toothpick comes out clean.
  8. Cool 10 minutes, then transfer loaf to a wire rack. Slice up your delicious loaf and enjoy!
