- 4 large egg yolks
- 2/3 cup granulated sugar
- 1 ½ Tbsp orange zest (about 1 large orange)
- 1/3 cup fresh orange juice (about 2–3 oranges)
- Pinch of salt
- 6 Tbsp unsalted butter (softened and cut into pieces)

- Set up a double boiler
Place a heatproof bowl over a saucepan with 1–2 inches of simmering water. Make sure the bowl doesn’t touch the water. - Combine ingredients
Add egg yolks, sugar, orange zest, orange juice, salt, and butter into the bowl. - Cook and whisk
Whisk continuously over gentle heat as the butter melts and the mixture thickens.
Cook until it coats the back of a spoon and reaches about 170°F (77°C), about 8–12 minutes. - Smooth and cool
Remove from heat and whisk again until silky smooth. - Chill
Transfer to a jar or bowl and press plastic wrap directly onto the surface.
Refrigerate for at least 1 hour. The orange curd will thicken as it chills.
