How We Made These Nutella Truffles

There are recipes you plan weeks in advance… and then there are the happy accidents.
Our No-Bake Nutella Truffles fall firmly in the second category.

We were spending an afternoon making a variety of truffles for an event — the kitchen counters were covered in bowls of melted chocolate, crushed cookies, and scribbled recipe notes. I was reaching for the cocoa powder to start another batch when I saw that we had some store-brand Nutella we picked up for another recipe. In that instant, the plan changed. The cocoa went back on the shelf, the Nutella came down, and I quickly grabbed our recipe development notebook.

Fifteen minutes later, we had a tray of glossy, decadent Nutella truffles chilling in the fridge — and a new favorite was born. My (Sidney) all time favorite chocolate are those Chocolate hedgehogs from Purdy’s and this is the closest I’ve come to making them at home!

We used Aldi brand “Golden oreos” which were $2.00 for a family pack, Aldi Chocolate for $0.99, Aldi Cream Cheese for less than $2.00 and target for the Nutella! Making this an incredibly affordable dessert! These full sized ingredients cost less than $10.00!

  • 134 g vanilla sandwich cookies → about 1 cup crumbs (from ~10 Oreos or similar)
  • 75 g cream cheese, softened → about 5 tablespoons (just over ¼ cup)
  • 75 g Nutella, melted → about ¼ cup + 1 teaspoon
  • Milk chocolate, for coating → about 1½ cups chopped or 250 g (depending on how thick you coat)
  • Cocoa powder, for dusting → about 2–3 tablespoons

Directions

Step 1: Crush the Cookies
Pulse the cookies into fine crumbs using a food processor or blender. No equipment? Pop them in a zip-top bag and crush with a rolling pin.

Step 2: Mix the Filling
In a mixing bowl or stand mixer, combine cookie crumbs, softened cream cheese, and melted Nutella. Mix until smooth and easy to roll.

Step 3: Shape the Truffles
Scoop out small portions (about walnut-sized) and roll into balls. Place on a parchment-lined baking tray.

Step 4: Chill
Refrigerate for 20–30 minutes or freeze for 10–15 minutes to firm up.

Step 5: Coat in Chocolate
Melt milk chocolate (double boiler or microwave in 20-second bursts). Dip truffles, letting excess drip off. Place back on the tray.

Step 6: Dust with Cocoa
While still slightly tacky, dust with cocoa powder for a professional finish. Chill until set.
