How to make: Feta Berry Balsamic Tartines

My favorite recipes are when you try to recreate something from a restaurant but end up going through so many iterations it becomes something uniquely your own. These Feta Berry Balsamic Tartines are fresh, creamy, slightly sweet, and incredibly easy to make. They are slightly inspired by a dish we had at Marmalade in Merida, YUC and we absolutely loved it and have made so many different versions since.

Toasted sourdough is topped with a whipped feta and high-protein Greek yogurt spread, then finished with strawberries, blueberries, fresh basil, and a drizzle of balsamic glaze. The result is a tartine that feels bright and balanced, with the feta and yogurt making a delish and tangy base. The rosemary is optional, but I really feel it adds so much.

It works beautifully for breakfast, brunch, or a quick afternoon snack, and it’s one of those recipes that looks straight out of a brunch restaurant with way too long of a line, but takes only a few minutes to put together. I mean come on! Look at those colors!


Ingredients

1 slice sourdough bread
Olive oil
Rosemary (optional)

2 tablespoons high-protein Greek yogurt
¼ cup feta cheese
Small drizzle olive oil

Toppings

Strawberries, sliced
Blueberries
Fresh basil, cut into thin strips
Balsamic glaze


Instructions

  1. Drizzle olive oil over a slice of sourdough bread and sprinkle lightly with rosemary if you’d like a little extra flavor.
  2. Place the bread in the air fryer and toast until golden and crisp.
  3. In a small bowl, combine 2 tablespoons Greek yogurt, ¼ cup feta, and a drizzle of olive oil.
  4. Mix by hand with a fork or blend until smooth and creamy.
  5. Once the bread is toasted, spread the feta yogurt mixture evenly over the top.
  6. Add sliced strawberries, whole blueberries, and thin strips of fresh basil.
  7. Finish with a drizzle of balsamic glaze.

Serve immediately while the bread is still crisp.
