Ingredients

Crust

  • 65 g (about ⅔ cup) graham cracker crumbs
  • 35 g (2 ½ tbsp) unsalted butter, browned
  • 1 tsp sugar

Cheesecake Filling

  • 150 g (5 oz / about ⅔ block) cream cheese, softened
  • 80 ml (⅓ cup) heavy cream, whipped to soft peaks
  • 16 g (1 ¼ tbsp) sugar
  • 16 g (1 ¼ tbsp) caster sugar
  • ¾ tsp vanilla extract
  • Pinch (less than 1/16 tsp) cream of tartar
  • ¼ tsp lemon juice
  • 10 g (2 tsp) sour cream

The Toppings

  • Whipped cream
  • Dehydrated strawberries (or fresh, if preferred)

Directions

  1. Make the crust – In a bowl, combine graham cracker crumbs, browned butter, and sugar. Stir until the crumbs are evenly coated. Press firmly into the base of a greased or parchment-lined 4–6 inch heart-shaped springform pan. Once you have a solid bottom fill it in by spoon fulls on the side of the pan. Use the back of your spoon to push the crumb up against the edge to create that wall of crust. Chill in the freezer while you prepare the filling.
  2. Whip the cream – In a clean bowl, whip the heavy cream with the cream of tartar until soft peaks form. Set aside.
  3. Prepare the filling – In another mixing bowl, beat cream cheese, sugar, caster sugar, vanilla, lemon juice, and sour cream until smooth and creamy. Gently fold in the whipped cream until fully incorporated.
  4. Fill the pan – Spoon the cheesecake mixture onto the prepared crust, smoothing the top with a spatula.
  5. Chill – Refrigerate for at least 4 hours (or overnight) until set.
  6. Decorate & serve – Before serving, top with whipped cream and strawberries. Slice and enjoy your perfect little cheesecake for two!
