- 4 tsp powdered sugar

2. Mix the filling
In a mixing bowl or stand mixer, combine the crushed cookies, cream cheese, powdered sugar, vanilla, and chai spice mix. Mix until the dough is thick and well combined. It should hold together when pressed.
3. Shape the truffles
Scoop 1-tablespoon portions of the mixture and roll into balls. Place them on a parchment-lined tray.
Tip: A cookie scoop helps keep the sizes consistent for even chilling and dipping.
4. Chill
Place the tray in the fridge for 30 minutes, or in the freezer for 10–15 minutes. This helps the truffles firm up and makes them easier to coat.
5. Dip in chocolate
Melt your choice of chocolate and dip each truffle using a fork. Tap off excess and place back on parchment paper.
