NEW Budget-friendly brunch: Sourdough Goat Cheese & Microgreens Tartine

An Easy, Budget-Friendly Brunch That Feels Fancy!

There’s just something magical about brunch. ✨
Not quite breakfast, not quite lunch — but always the perfect excuse to whip up something a little extra special. And let’s face it: brunch doesn’t have to mean expensive avocado toasts or $17 egg bennies at a trendy café.

This Sourdough Goat Cheese & Microgreens Tartine hits that sweet spot between affordable and elevated. Crunchy sourdough, creamy herb goat cheese, sweet onion jam, fresh tomatoes, and a pop of microgreens come together in the easiest — yet seriously impressive — way.

This is one of our favorite recipes when we want to make something special without spending a ton. Thanks to savvy shopping (shout out to Aldi, where you can grab herb goat cheese for $1.25 and an onion jam that does the trick perfectly), this dish is as budget-friendly as it is delicious.

Why We LOVE This Tartine ❤️

  • It feels fancy but is so easy to make.
Toast some bread, spread some cheese, pile on toppings… done!
  • Incredibly budget-friendly.
We spent just a few dollars on ingredients thanks to smart grocery choices (Aldi fans, this one’s for you!).
  • Customizable & versatile.
You can swap ingredients depending on what you have — think roasted veggies, hot honey drizzle, or swap microgreens for arugula.
  • Perfect for brunch, lunch, or even a light dinner.
Pair with a simple side salad or some fresh fruit and it’s a meal.

Ingredients 🛒

  • Sourdough bread (thick slices)
  • Olive oil + dried rosemary (for brushing)
  • Herb goat cheese (we love the $1.25 Aldi version)
  • Onion jam (any brand works — we used Aldi’s budget version)
  • Microgreens (mix or single variety — go for what’s fresh!)
  • Scallions (sliced thin)
  • Mini tomatoes (sliced, any variety)

How to Make Your Tartine 🍽️

Step 1: Toast the sourdough

Slice your bread thickly — this gives the tartine structure and crunch.
Brush lightly with olive oil and sprinkle with rosemary. Pop into the air fryer at 375°F for 4-5 minutes, or until golden and crispy. (You can also use a toaster oven or regular oven.)

Step 2: Prep your toppings

While the bread is toasting, slice the tomatoes and scallions.
If your onion jam is cold or stiff, give it a quick stir to loosen it up so it spreads easily.

Step 3: Spread the goat cheese

Once the bread is out and still warm, spread on a generous layer of herb goat cheese. The warmth helps the cheese get nice and creamy.

Step 4: Add the onion jam

Dollop and gently spread the onion jam over the goat cheese. The sweet-savory combo is key here — it balances out the tanginess of the cheese beautifully.

Step 5: Pile on the freshness

Add sliced tomatoes, scallions, and finish with a big handful of microgreens on top. A little sprinkle of flaky sea salt makes it pop!

Step 6: Serve immediately

Tartines are best enjoyed fresh while the bread is still crispy and the toppings are vibrant.

Ingredient Spotlight 🌟

🧀 Herb Goat Cheese

We adore goat cheese for tartines. Not only does it offer a creamy and tangy flavor, but it’s also super affordable — especially if you shop smart. The Aldi herb goat cheese comes in at just $1.25 and tastes fantastic. Plus, goat cheese is naturally lower in lactose than cow’s milk cheeses, making it easier for many people to digest.

🌱 Microgreens

Tiny but mighty! Microgreens are packed with nutrients — often containing more vitamins and antioxidants than mature greens. They add freshness, a subtle peppery kick, and tons of visual appeal. Grab whatever mix looks good at the store — from radish to broccoli to mustard greens, they all work.

🧅 Onion Jam

Onion jam is one of those secret weapons in the kitchen. Sweet, savory, and deeply flavorful, it turns simple dishes into something special. Aldi’s budget-friendly version is perfect for recipes like this — no need to splurge.

Make It Your Own ✨

This sourdough tartine is endlessly customizable:

  • Add a drizzle of hot honey or balsamic glaze for a sweet and spicy twist.
  • Swap the microgreens for baby arugula or spinach if that’s what you have.
  • Top with a poached or soft-boiled egg for extra protein.
  • Add smoked salmon for a more decadent brunch version.

Why This Recipe is Perfect for Budget-Friendly Brunch 🍳

Brunch doesn’t have to break the bank. At cafés, a tartine like this could easily run you $10-$15. But when made at home with smart shopping, you can enjoy 2-3 servings for less than $7 total.

Here’s the rough breakdown (your mileage may vary based on your store):

IngredientApproximate Cost
Sourdough bread (per slice)$0.50
Herb goat cheese (Aldi)$1.25
Onion jam (Aldi)$2 (you’ll only use a little)
Microgreens$2
Scallions and tomatoes$2

That’s brunch for 2-3 people for less than $7!
Eating well doesn’t have to mean spending more. With a little creativity, you can make a meal that feels indulgent without blowing your grocery budget.

Final Thoughts 💭

This Sourdough Goat Cheese & Microgreens Tartine is proof that simple ingredients — when combined thoughtfully — can make a truly special meal.
It’s crunchy, creamy, savory, and fresh all at once. And with smart shopping (thanks again Aldi 👏), it’s affordable too.

Whether you’re hosting a weekend brunch, treating yourself on a lazy afternoon, or just want a no-fuss but elevated snack, this tartine delivers every time.

  1. Great recipe! I’m going to make this for friends who will be visiting in a few weeks as they love goats cheese!

  2. Even before reading through this recipe I knew it was something I HAD to make! It looks absolutely delicious!

  3. Now this looks like my kind of recipe. I love bread, goat’s milk cheese, and tomatoes, so already it’s a winner. I have never had onion jam before but it sounds like a great addition to this. I will definitely have to give it a try.

    1. Despite the name, onion jam still has quite a bit of sweetness to it that helps balance the tartness of the goat cheese. Pretty cheap to make your own as well, especially if you have onions that are close to expiring. Thinking we may have to make another post for that lol
