We were chatting about what we should make next and then we thought of something that has been super intimidating for both of us.
Fudge.
It’s funny — we can develop 40 recipes in a month without blinking, but fudge? The word alone made us picture candy thermometers, bubbling sugar, hard-ball stages… the whole “science class meets Christmas baking” situation.
But now that there’s a baby nephew in the family — and suddenly the holidays feel more about crafting together than perfect outcomes — we decided it was time to rethink fudge entirely.

That’s how this easy gingerbread fudge was born — not as a fancy showstopper, but as a way to turn an “intimidating” recipe into a five-minute, microwave-only, kid-friendly craft. We poured it into little festive silicone molds that look like mini advent calendar chocolates, and within minutes the whole kitchen smelled like a gingerbread house.

Ingredients

(Makes 12–20 advent-style pieces, depending on mold size)
- 7 oz (198g) full-fat sweetened condensed milk (half a 14oz can)
- 1 1/4 cups (≈292g) white chocolate chips
- 1 teaspoon pure vanilla extract
- 1.5 Tablespoons (45ml) unsulphured or dark molasses
- ½ teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground allspice
Directions



1. Prep your molds
Use festive silicone molds (advent calendar style is perfect).
If you don’t have them, a square silicone pan works — just slice after chilling.
2. Melt the base
In a microwave-safe bowl, combine:
- white chocolate
- sweetened condensed milk
Microwave 30 seconds, then in 10-second bursts, stirring until smooth and glossy.
3. Add the gingerbread flavor
Stir in:
- vanilla
- molasses
- cinnamon
- ginger
- nutmeg
- allspice
(This is my fave part, our kitchen smelt like a Christmas market instantly!)
4. Fill & smooth
Spoon into molds and gently tap to remove air bubbles.
5. Chill
- Freeze 10–15 minutes
OR - Refrigerate 45 minutes
6. Serve
Pop them out, let them soften slightly, and enjoy the creamiest gingerbread bite ever.

How do you make gingerbread fudge without a thermometer?
Use this no-bake Christmas fudge method: melt white chocolate with sweetened condensed milk in the microwave, then stir in molasses and gingerbread spices. No boiling, no sugar stages — just pour and chill.
Can I use milk or dark chocolate instead of white?
You can, but we don’t recommend it for this gingerbread fudge recipe. White chocolate lets the gingerbread spices and molasses shine. Dark chocolate will overpower the gingerbread flavor.
Can I double this recipe for a big Christmas platter?
Yes! Use:
- 1 full 14oz (396g) can sweetened condensed milk
- 3 ¼ cups (585g) white chocolate chips
- Double all spices and molasses
Pour into a 9×9 silicone or parchment-lined pan and cut into bite-sized squares.
Is this recipe kid-friendly to make?
Completely. This is one of our favorite Christmas no-bake desserts for kids:
- No stove
- No scorching-hot sugar
- Just microwaving, stirring, and filling molds with help from an adult
Do I really need the molasses?
Yes — molasses is what makes it taste like real gingerbread fudge instead of just “spiced white chocolate.” Unsulphured or dark molasses works best.
How to Store / Meal Prep

- Freezer: 3 months
- Travel: Excellent — just keep cool so they stay creamy, not soft.
Layer with parchment so they don’t stick or smudge.
