Lately, Iโ€™ve been making a lot of high-protein tiramisus for my fiancรฉ to take to work for his breakfasts. Theyโ€™ve been great for busy mornings, but at some point I realized I wanted something a little more indulgent for myself at home.

Weโ€™re also in the very beginning stages of thinking about an engagement party. Nothing planned yet (friends and family relax! You have not missed an invite!) but we have started playing with desserts we will be prepping. This tiramisu is one of the desserts I found while playing around with ideas. It’s great because it’s Light, no-bake, easy to portion, and not overly rich.

It still feels springy and fresh, but the caramelized peaches give it a bit of depth. The brandy is cooked into the caramel, so the alcohol burns off, and whatโ€™s left is just warmth and flavor. I ended up making this as a small after-dinner pick-me-up, and itโ€™s exactly the kind of dessert I keep going back to.

๐Ÿ‘ Brandy & Caramelized Peach Tiramisu Recipe

This recipe makes 2

Ingredients

Mascarpone Cream

  • 1/2 cup mascarpone
  • 1 cup high-protein Greek yogurt
  • 1 teaspoon vanilla extract

Caramelized Peaches

  • 1 can peaches, chopped
  • 1/2 cup white sugar
  • Splash of brandy, to taste

For Assembly

  • Ladyfinger cookies
  • Optional: maple sugar, for dusting

How to Make the Caramelized Peaches

  1. Add the chopped peaches to a bowl and lightly crush them with a fork.
  2. Scoop out about 3/4 of the crushed peaches and transfer them to a frying pan.
  3. Add the sugar and a splash of brandy.
  4. Cook over medium heat, letting the mixture bubble and reduce until syrupy and lightly caramelized.
  5. Remove from heat and let cool slightly.

Make the Mascarpone Cream

In a bowl, stir together the mascarpone, Greek yogurt, and vanilla until smooth and creamy.


Assemble the Tiramisu

  1. Dip each ladyfinger into the remaining 1/4 of the crushed peaches for about 2 seconds per side.
  2. Place the soaked ladyfinger at the bottom of a glass or tin.
  3. Add a spoonful of the caramelized peaches.
  4. Add a layer of mascarpone cream.
  5. Repeat the layers as desired.
  6. Finish with a dollop of caramelized peaches on top.
  7. Optional but excellent: lightly dust with maple sugar before serving.

Can I make this ahead of time?

Yes. This tiramisu actually benefits from a little chill time. You can make it a few hours ahead and store it covered in the fridge until serving.

Is the brandy very strong?

Not at all. It adds warmth and depth rather than an obvious alcohol flavor. If you prefer, you can reduce the amount or leave it out entirely.

Can I use fresh peaches instead of canned?

Absolutely. Just peel and chop ripe peaches and cook them a bit longer to help them soften and release their juices.

What can I use instead of ladyfingers?

Soft tea biscuits or sponge cake cut into strips work well if you donโ€™t have ladyfingers on hand.

Is this very sweet?

Itโ€™s balanced. The Greek yogurt keeps the mascarpone cream from feeling heavy or overly sweet, while the peaches add natural fruitiness.
