Here’s what you’ll need to make 1 litre of popsicle liquid (enough for about 8–10 standard popsicle molds depending on size):

  • Watermelon – enough to yield 1 litre of juice after blending (roughly 4–5 cups of cubed watermelon, about 1.5 kg or 3–4 lbs)
  • Juice of 1 lemon – for brightness and balance
  • A handful of fresh mint leaves – about 10–15 leaves, depending on how strong you like it

📝 Optional: If your watermelon isn’t super sweet, you can add 1–2 tbsp of honey or maple syrup, but we usually skip it!

Equipment Needed

  • Blender or food processor
  • Fine mesh strainer (if you want a smooth texture)
  • Popsicle molds (or ice cube trays, paper cups + sticks in a pinch!)
  • Freezer space!

Let’s Talk Texture

Here’s the deal: once everything is blended, you’ll end up with about 1 litre of watermelon-mint-lemon goodness. You get to choose your popsicle texture:

  • Rustic: Keep all the pulp and bits of mint for a bold, vibrant popsicle. It’s slightly slushier and very “homemade” in the best way.
  • Smooth: Strain the mixture using a fine mesh sieve or cheesecloth to remove pulp and mint bits. The result? A smooth, almost sorbet-like popsicle with a more subtle flavor.

📌 Either way, make sure your final liquid (after blending and optional straining) equals 1 litre to fill your molds properly.

How to Make Watermelon and Mint Popsicles

Step 1: Cube and Blend the Watermelon

Remove the rind and cube your watermelon. Add it to a blender with your mint leaves and blend until totally smooth. Add half the lemon juice and blend again for 5–10 seconds.

🍉 TIP: If your blender has trouble with a thick blend, add a splash of water to get things moving.

Step 2: Taste Test & Adjust

Before you strain, give your mixture a taste. Want it sweeter? Add a touch of honey or maple syrup. Need more brightness? Add more of the lemon.

Step 3: Strain (or Don’t!)

If you prefer a smooth popsicle, pour the mixture through a fine mesh strainer into a large measuring cup until you reach 1 litre of liquid. If you love pulp and don’t mind mint flecks, skip this step and measure your unstrained liquid to ensure you have 1 litre.

✅ NOTE: If you end up with less than 1 litre after straining, you can top it off with a bit of water, more blended watermelon, or even a splash of fruit juice (like coconut water or limeade!).

Step 4: Pour and Freeze

Pour the mixture into your popsicle molds. Don’t fill them completely to the top—leave a little room for expansion as they freeze. Insert sticks and place in the freezer for at least 5–6 hours, ideally overnight.

Step 5: Unmold and Enjoy!

To easily remove the popsicles, run the outside of the mold under warm water for 10–20 seconds. Gently wiggle the sticks to release.

Now grab a towel, head to the patio, and enjoy your homemade summer on a stick. 🍧
