We are fully obsessed with pistachio cream. Like, spend 100€ and half a suitcase on it kind of obsessed. So this recipe uses pistachio cream, If you don’t already have some on hand, don’t worry. While we got ours in France/Germany, Pistachio cream is easy to find on Amazon, and we’ve also spotted a few jars at Winners. You can also make your own by blending up some pistachios yourself!
These Pistachio Dream Cookies are soft, rich, and packed with pistachio flavor. They bake up tender with lightly golden edges and are finished with a thin chocolate coating on the bottom for a little extra indulgence. Ingredients
- 7.5 ounces all-purpose flour (about 1.5 cups)
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup pistachio cream or pistachio spread
- Chocolate for dipping (milk or dark)
How to Make Pistachio Dream Cookies

- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- In another medium bowl, use a hand mixer to cream the butter and sugar together for about one minute, until light and fluffy.
- Add the egg and vanilla extract and mix until fully combined.
- Mix in the pistachio cream until smooth and evenly incorporated.
- Add the dry ingredients to the wet ingredients and mix just until the flour disappears. Do not overmix.
- Using a medium cookie scoop, portion the dough onto the prepared baking sheets. You should get about 24 cookies total, divided between the two trays.
- Bake for 13 minutes, until the edges are lightly golden and the centers are still soft. Let the cookies cool on the baking sheet for a few minutes.
- While the cookies cool, melt the chocolate in a microwave-safe bowl in short intervals, stirring until smooth.
- Dip the bottom of each cookie into the melted chocolate, creating a thin coating. Place chocolate-side down on parchment paper.
- Let the chocolate set at room temperature, or place the cookies in the fridge to speed things up.
