How to Meal Prep: Pierogi Bake

Lately, Thomas has been working long 12+ hours days out where he can’t access a microwave, and even though I’ve been working from home, I honestly don’t feel like I have much time to cook lunch for myself either. Being “at home” doesn’t magically create free time, meetings stack up, emails pile on, and suddenly it’s 2 p.m. and I’ve forgotten to eat.
We realized pretty quickly that relying on one big lunch or waiting until a big dinner just wasn’t working for either of us.
So instead, we shifted to smaller, warm meals we can snack on throughout the day, about 4–6 mini meals instead of 3 large ones. They’re filling without being heavy, easy to reheat, and actually comforting, which makes a huge difference on long days. We’ve been calling this series of meal prep our version of Modern day TV Dinners. Just instead of it coming from a store, we make these once a week and have an entire freezer of delicious ready food!
For Thomas, we picked up a heated lunch box from Canadian Tire, and it’s been a game changer. It lets him heat food slowly while he works, no microwave needed. That’s what inspired this pierogie meal prep: small portions, rich and cozy, designed to stay warm and satisfying.
These little pierogie tins are creamy, cheesy, hearty, and perfect for slow reheating — whether you’re at a desk, in a truck, or just juggling a busy day at home.

Creamy Pierogie Bake Meal Prep (Perfect for Heated Lunch Boxes)
Make the Sauce (Stovetop)
In a saucepan over medium-low heat, add:
- 1½ cups chicken or beef broth
- 1 cup sour cream
- ½ block cream cheese
- ½ cup 10% cream
- Chili powder, to taste
- Garlic powder, to taste
- Paprika
- Salt & pepper, to taste
- Fresh garlic, minced
Stir gently until everything melts together into a smooth sauce.
Let it simmer gently for a while to thicken, stirring often.
Do not boil.
Optional but highly recommended:
Cook bacon separately and add a spoonful of the bacon fat to the sauce for extra depth and richness.
How to Assemble





You’ll need mini loaf tins (these are key for portioning).
- Fill each tin about ¼ of the way with sauce
- Add 5 frozen pierogies
- Sprinkle with grated cheese
- Add green onions
- Add crumbled bacon
- Cover with a lid or wrap tightly in foil
Repeat until all tins are filled.
How to Reheat
These were designed specifically for slow, gentle reheating:
- Heated lunch box / portable food warmer:
Heat for 30–90 minutes, depending on temperature - Oven:
Bake at 300°F (150°C) for 30 minutes
The pierogies soften beautifully, the sauce stays creamy, and everything comes out warm and comforting.

Classic potato and cheese pierogies work best, but cheddar, bacon, or onion varieties also pair really well with the creamy sauce. Really any kind on sale! This recipe makes the budget ones really taste good.
Can I make this without bacon?
Definitely. The bacon is optional. You can leave it out entirely or replace it with caramelized onions or sautéed mushrooms for a vegetarian version.
Is this a good lunch for long workdays?
Yes. These smaller, filling portions are designed for snacking throughout the day, making them ideal for long shifts, field work, or busy work-from-home schedules. If you would rather have this for a dinner I would double the portion in each tin!
