Fireweed Honey Roasted Carrots: The New Best Holiday Side Dish

Why Fireweed Honey?

Carrots are a staple in many kitchens, known for their vibrant color and nutritional benefits. They are rich in vitamins A, C, and K, as well as fiber and antioxidants. Honey has plenty of ancillary health benefits as we already know, but fireweed honey in particular has powerfully enhanced anti-inflammatory properties. Chronic inflammation can lead to various health issues, from arthritis to heart disease. Honey’s natural compounds can help mitigate these effects, promoting better health and well-being.

Ingredients

To prepare this mouthwatering honey-roasted carrot recipe, you’ll need:

  • 2 lbs carrots: Choose fresh, colorful carrots. Organic varieties often have a more intense flavor and sweetness.
  • 2 Tbsp honey: This is the star ingredient that adds that delightful sweetness and helps with caramelization. As said above, we always recommend Fireweed honey if you can get it, but any honey will do!
  • Fresh sage: A herb with earthy notes that pairs beautifully with the sweetness of honey. The roasting makes it delightfully crisp!
  • Fresh rosemary: Adds a fragrant touch that enhances the overall flavor.
  • 1 Tbsp olive oil: Helps in achieving a golden, crispy exterior while adding richness and makes it way easier to spread the mixture.
  • Salt and pepper: Essential for seasoning and bringing out the flavors of the carrots.

Preparation

Step 1: Preheat Your Oven

Begin by preheating your oven to 425°F (220°C). A hot oven is crucial for caramelizing the honey and achieving that perfect roast.

Step 2: Prepare the Carrots

Wash the carrots thoroughly to remove any dirt. You can peel them if desired, but leaving the skins on adds texture and nutrients. We do this with a lot of our vegetables and just keep a coarse kitchen brush on hand for this purpose specifically.

As you’ll see in the photos, we used thinner carrots that weren’t very long and roasted them whole. Depending on the carrots you’re using and how you’re wanting to serve these later, you may want to cut them down to a more manageable size.

Step 3: Create the Honey Mixture

In a small bowl, whisk together the honey and olive until well combined. The honey will not only sweeten the carrots but also help them achieve that beautiful caramelized finish. We recommend popping this in the microwave for no longer than 15 seconds, the honey will start boiling before 30! This just makes it easier for the next few steps!

Step 4: Add Fresh Herbs

Finely chop the fresh sage and rosemary. The combination of these herbs will infuse the carrots with delightful flavors that complement their natural sweetness. Add the herbs to the honey mixture and stir to combine.

Roasting the Carrots

Step 6: Arrange on a Baking Sheet

Line a baking sheet with parchment paper for easy cleanup. (We used a silicone sheet) Spread the carrots out in a single layer, ensuring they’re not overcrowded. Overcrowding can lead to steaming instead of roasting, preventing that lovely caramelization. Now, grab a brush and just go to town on the carrots with your honey mixture. Don’t save a single drop, get it all on there!

Step 7: Roast in the Oven

Place the baking sheet in the preheated oven and roast the carrots for about 35-40 minutes. Halfway through the cooking time, toss the carrots with a spatula to ensure even roasting and to promote that golden color on all sides.

Step 8: Check for Doneness

The carrots are ready when they are fork-tender and have developed a caramelized, golden exterior. If you prefer them a bit more charred, you can leave them in the oven for an extra 5 minutes, but keep an eye on them to avoid burning.

Serving Suggestions

Once your honey-roasted carrots are out of the oven, it’s time to serve them. Here are some delicious ways to enjoy this dish:

  • As a Side Dish: Pair them with roasted meats like chicken, beef, or pork for a comforting meal that highlights seasonal flavors.
  • In Grain Bowls: Toss these sweet, roasted carrots into a grain bowl with quinoa or farro, adding a burst of color and flavor.

If you find yourself with any leftovers (though they’re likely to disappear quickly), store them in an airtight container in the refrigerator for up to 3 days. To reheat, place them in the oven or microwave, but note that reheating in the oven will help maintain their crispness.
